I’ve been intrigued by 2 ingredient recipes, often very nutritious and delicious! Here’s a raw energy bar you can make at home! And I’m not kidding; only two ingredients!

2 cups of organic dates, I purchased them in the bulk section of Whole Foods. And, 2 cups of organic steel-cut oats.

Tip: If the dates are not soft then soak them overnight in filtered water to cover.

Put the water and dates in a food processor and pulse until mixture turns to the consistency of a thick smooth paste, add more water if necessary. Add the oats, pulsate until blended, press into the bottom of a glass pan to about 1/2″ thickness and refrigerate to chill. Cut and serve. If you are making a bunch, put bars in an airtight container and store in the refrigerator!

In the days ahead I’m going to share about  how to make a pizza crust with cauliflower and eggs! This seems so ridiculous, I have to try it first to make sure it really works. Stay tuned!
